The Alchemy of Chocolate

The transformation from raw cacao to chocolate bars is done entirely in-house. To make these chocolates, heirloom organic cacao nibs (cracked & shelled cacao beans) & organic maple sugar are combined in a small machine called a chocolate refiner. Using granite stones, the cacao and sugar are mixed together over multiple days, creating a silky smooth texture.

During this process a transformation occurs: What we know as cacao becomes what we know as chocolate.

From there, the chocolate is transformed once more with the process of tempering and the addition of ingredients such as tonic herbs, culinary essential oils, and sea salt.

You will not find any refined sugars, preservatives, artificial flavours, soy lecithin or processed junk in these chocolates. The ingredients are always organic and high quality. These chocolates are designed with your health in mind! <3

Chocolate with Benefits

If you’re going to eat chocolate, why not eat chocolate with benefits? Here are some of the ingredients you will find in these chocolates:

Organic Heirloom Cacao:

  • One of the highest food sources of magnesium

  • Rich in antioxidants (twice that of red wine and three times that of green tea)

  • Contains the so called “love chemical” PEA, which is produced by the brain when we are in love.

  • Contains anandamide, which is released by the brain when we are in a state of enjoyment. Ananadamide is a cannabinoid which fits into the same receptor site in our brain as THC.

  • High in the amino acid triptophan. Along with magnesium and B-vitamins, triptophan is required by the brain to produce serotonin.

Maple Sugar:

  • Made from dehydrated maple syrup, maple sugar is a minimally processed sweetener that retains it’s naturally occuring vitamins and minerals. Although maple sugar is healthier choice, I still choose to keep the amount of sugar in my chocolates to a minimum (basically so that we can eat A LOT of chocolate without consuming a lot of sugar).

Real Vanilla Bean

  • Real vanilla is the fruit of an orchid. If you have ever tried it, you know that artificial vanilla is just not the same! Vanillin, the primary compound in real vanilla, is known to be an aphrodisiac and mood-enhancer. Studies have shown a potential for anti-carcinogenic properties as well.

Reishi Mushroom (my all time favourite herb <3 )

  • Reishi is a highly regarded Chinese tonic herb that has traditionally been used for its longevity and anti-aging benefits.

  • Reishi is very beneficial to the immune system. It is dual-directional, which means that it does not just stimulate the immune system, it regulates and supports it.

  • Reishi is widely used in Asia to improve cardiovascular health.

  • It is referred to as the “Mushroom of Spiritual Potency” because of its abilty to help improve the body’s stress response, to calm the mind, and to build our Shen (which can be thought of as our “higher consiousness”).

  • Reishi spores (which are what I use in the Reishi Vanilla bar) have been shown to have up to 70x the immunological activity of whole reishi mushrooms. The spores contain high amounts of polysaccarides (such as beta-glucans), which act as food to the immune system.
